Crispy Baked Herbed Potato Wedges

As someone who cooks alot I am always looking for great side dishes. These potatoes are incredibly tasty and very easy to make. They go great with most any chicken dish and tonight I served them on the side with burgers.  Give them a try and they’re sure to become your quick and easy “go to” side dish….
You will need…


2.5 lb red potatoes cut into wedges
3 tbsp minced garlic
1/3 C olive oil
1 Tbsp kosher salt
½ tsp fresh cracked pepper
1 tsp herbs de provence
2 Tbsp fresh chopped flat leaf parsley

Directions:
Heat oven to 400 degrees and spray a large cookie sheet with canola oil spray. Place potatoes on a cookie sheet and cover with olive oil, salt, pepper and herbs and toss well ensuring that each potato wedge is well coated. Place in the oven for 45 minutes, turning them mid-way through the roasting process.
Remove from the oven, place in a serving dish and sprinkle with fresh parsley.
