Crispy Fried Parmesan Chicken with a Kick

For some time now I have been working at creating what I consider the perfect fried chicken.  This recipe definitely fits the bill. It has an amazingly crunchy crust which we all know is an absolute must and the cayenne gives it that kick that is not at all over powering, yet you know it’s there.  I guarantee once you try this recipe you’ll be making it over and over again as it will become a family favorite!

You will need…

5 lbs thawed mixed chicken pieces (picnic pack)
2C All Purpose Flour
1 ½ tsp table salt
¼ tsp Cayenne Pepper
2C butter milk
2 large eggs
3-4 dashes hot sauce
2C Panko Bread Crumbs
1 ½ C herbed bread crumbs
1 C freshly grated parmesan
Canola Oil

Directions:
Preheat oven to 375 degrees. Place a large frying pan over medium heat and pour enough canola oil (about 4-5 cups) in to go half way up the sides of the pan.  Pour flour, salt and cayenne pepper into a pie plate and mix well.  Next whisk together the buttermilk, eggs and hot sauce in medium sized bowl and set aside; in another pie plate mix together the bread crumbs and parmesan cheese.

Test oil for readiness by dropping a few bread crumbs into it. It is ready for the chicken when the bread crumbs begin sizzling as soon as they hit the oil.
Roll each piece of chicken into the flour, dip into the buttermilk mixture and then roll in the crumbs, making sure to fully coat each piece during each step.  Place the chicken into the oil and repeat with the remaining chicken pieces. Fry on all sides until nicely browned. 

When the all chicken is browned on all sides remove from the pan, lightly season with salt and place on a cookie sheet lined with a fitted rack.  Finish cooking the chicken by baking in the oven for 35 minutes.

I like to serve this chicken with corn on the cob and mashed potatoes with gravy on the side.  In a word it’s a really good time!
