Monterey Chicken Burgers with Sweet & Spicy Sauce

 You will need…

2 lbs ground chicken

½ C chopped red onion

4 cloves minced garlic

½ C chopped cilantro

½ C chopped red pepper

1 egg

2 Tbsp buttermilk

1 1/2Tbsp McIlhenny’s Green Pepper Sauce

8oz Monterey Jack cheese (1/3 C shredded  remainder cut into slices)

1 ½ Tbsp Kosher salt

1 tsp pepper

3 Tbsp olive oil

In a medium sauce pan add 2 Tbsp olive oil and bring to medium temperature. Add onions and peppers and cook for 6 minutes then add garlic and ½ of the cilantro.  Sauté for an additional 2 minutes then remove from heat and set aside allowing to cool.


Place ground chicken in a large mixing bowl and add egg, buttermilk, cheese, salt, pepper, Green Pepper Sauce, olive oil and cooled onion mixture. Stir together until all ingredients are well combined then mix in the remaining cilantro.  Important to note: this mixture will be somewhat wet when forming the burgers. A sure sign they’ll be flavorful and juicy.


Bring large frying pan to medium and add 2 Tbsp olive oil.  Form the chicken mixture into patties (about 1 ½ C per patty).  Place into the pan and fry for 5-6 minutes per side. 



 When the burgers are just about done place 2 slices of Monterey Jack cheese over each patty and place a lid on the pan for 2-3 minutes or until cheese melts.




Sauce
1 C apricot preserves
3 Tbsp olive oil
2 clove minced garlic
3 Tbsp minced jalapeno pepper
5 Tbsp rice wine vinegar
Juice of 1 lime
1 tsp salt

Heat a small frying pan to medium temperature and then add oil, garlic and jalapeno then sauté for 2-3 minutes.  Add preserves, vinegar, lime and salt.  Bring to a simmer and cook for approximately 5 minutes or until sauce reduces slightly and thickens.





Putting the burgers together…

Take a large bun and cut it in half placing a burger on the bottom half of the bun. Pour a few spoonfuls of the sauce over the burger then add sliced red onion and lettuce. Spread some additional sauce on the underside of the top bun and place on top of the lettuce.  Lastly be sure to have plenty of napkins on hand as this burger is so juicy it has great potential to be messy. But I’m sure you’ll agree the risk of getting a little messy is surely worth it when you taste a bite of this amazing burger!
