Savory French Onion Soup

One of my all time favorite soups has to be the quintessential French Onion.  Over the years I’ve made it time and time again. It has become the most requested menu item of my culinary repertoire . I make it for birthday and holiday celebrations and no matter how big a batch I prepare there never seems to enough.  This recipe is derived from the many variations I’ve tried over the years in addition to my own trial and error in striving to create what I consider the perfect French Onion soup.

Roasted Lobster w/Garlic & Parsley Stuffing

In the spirit of romance, tonight was all about stepping it up a notch. After work I made a quick stop at the local market with one item on my mind - lobster.  Who doesn’t love a lobster that is well seasoned and even more important, well cooked.  While I had no intention of spending all night in the kitchen, I still wanted to create something wonderful that was both delicious and simple. I started by taking some help from the fish monger, in having him split the lobsters down the center. Then I stuffed them with  fresh, savory ingredients. The result was fabulous and I hope you treat yourself and try this one too!

The Simple Omelet

This past weekend we gathered for dinner with some longtime friends. They recently began raising chickens and they generously shared a dozen of their freshly hatched eggs.  In my mind there’s no better use for fresh eggs than a delicious omelet. This is a simple recipe that I believe makes the best use of these little beauties and doesn’t mask their fresh taste.
