Simple Bruschetta with Roma Tomatoes and Basil

I have long been a lover of Italian food including everything from appetizers to desserts. One of my favorites has to be Bruschetta. There are so many variations and options but I am especially fond of the traditional tomato basil topping. This is a simple recipe to prepare, is exceptionally delicious and a wonderful beginning to any meal. The one ingredient that sets this recipe apart from some others you may have tried is the white balsamic vinegar. You will need…

7 Roma tomatoes – cored, seeded and diced into 1/3” cubes
¼ C chopped basil
1 ½ Tbsp white balsamic vinegar
1 tsp kosher salt
¾ tsp pepper
1/3 C good quality olive oil
1 loaf baguette, sliced into 1″
1/3 C shredded Parmesan cheese
Directions:
Preheat your oven to broil. Lightly brush each side slice of bread with the olive oil and place onto your baking sheet.  
Place the baking sheet in the oven and broil for 2-3 minutes or till golden brown then turn the slices over and sprinkle each with Parmesan. * It’s really important at this point to keep a close eye on the bread during the broiling process as it can easily burn. Remove from the bread from the oven when the edges are browned and the cheese is melted.
Place tomatoes and remaining ingredients in a medium sized bowl. Gently toss and then place a small amount of the mixture on each slice. Serve immediately
