Savory Cream of Chicken Soup with Wild Rice and Vegetables

I love a good home-baked chicken as much as anyone, but sometimes it can be challenging to find the time to make it, which is why I am perfectly fine with purchasing rotisserie chicken from the local market. And let’s face it, they taste pretty good too!  There are so many things you can do with them, including making some really delicious soup.  This recipe is quick, simple and leverages the chicken to its fullest, resulting in great flavor and lots of freshness from the vegetables.  As always, do enjoy!

What’s your favorite way to use rotisserie chicken?
You will need…
1 Rotisserie Chicken
3 Tbsp olive oil
½ C. diced onion
½ C. diced red pepper
½ C. diced carrot
5 cloves minced garlic
1/3 C. wild rice
1 tsp thyme
½ tsp pepper
3 Tbsp cornstarch
1 C. heavy cream
1 C. whole milk
8 C. chicken stock
Remove the meat from the chicken and then dice and set aside.  Place a large pot over medium heat and add the olive oil.  When it’s hot add the onions, peppers and carrots and sauté until the onions begin to brown slightly.
Add the garlic, chicken, wild rice and thyme and cook for an additional two minutes. 
Pour in the broth and stir, making sure to scrape all the lovely brown bits off the bottom of the pot and then cover the soup and allow it to simmer for 25 minutes.  While that’s happening, whisk the milk, cream and cornstarch together and pour into the soup after the 25 minutes is up, or until the rice is tender.  Stir until thickened and then cook for an additional 10 minutes.  Serve immediately with your favorite bread.

I like to shred a rotisserie chicken, add back in some of the skin, add rice, corn, green pepper, and wrap in a tortilla and serve it up hot as a quick Tex-Mex dinner.
