About 5 years ago Craig and I sampled a local Italian restaurant we had heard rave reviews about. We had their appetizer special which happened to be eggplant rollatini. Neither of us had ever had it before and absolutely loved it! As you might imagine I went on a mad quest trying to recreate their recipe and after many years and multiple attempts I’m fairly confident I have created some worthy competition. Here’s an easy summertime salad recipe that is incredibly healthy and refreshing. Craig and I are anxiously anticipating our vacation in a few weeks and in preparation we’re both looking to cut our calories. Now I suppose we could opt for a diet of rice cakes and water, but who wants that nonsense right? This salad is not only a much healthier option but it is significantly tastier too! I think my favorite part is the grilled mango. I’ve never done that before tonight, but it was sitting in my fridge begging to be used, so I figured – why not. This is one of those recipes that I’ve been making for years. If you’ve never had satay it is quite an interesting culinary experience. You would never expect peanut butter and meat to go together and yet when you take that first bite, it’s as if they’ve been best friends for years.
