Easy Grilled Chicken Salad with Mango and Vegetables

Here’s an easy summertime salad recipe that is incredibly healthy and refreshing. Craig and I are anxiously anticipating our vacation in a few weeks and in preparation we’re both looking to cut our calories.  Now I suppose we could opt for a diet of rice cakes and water, but who wants that nonsense right?  This salad is not only a much healthier option but it is significantly tastier too!  I think my favorite part is the grilled mango.  I’ve never done that before tonight, but it was sitting in my fridge begging to be used, so I figured – why not.  It not only worked, it worked REALLY well! The grill makes it even sweeter and it’s perfect against the vinaigrette.  I hope you enjoy this as much as we did!!!  

4 chopped garlic cloves
6 sprigs fresh thyme
1/3 C Apple Cider Vinegar
1/3 C canola oil
1 tsp salt
1 tsp pepper
4 boneless chicken breasts
1 mango cut into slices
1 orange pepper cut in half with seeds removed
1 large sweet Vidalia onion cut into large slices
3 heads romaine lettuce torn into bite sized pieces
2 C. fresh Arugula
2 Tbsp Dijon
1 large garlic clove minced
1 tsp kosher salt
½ tsp pepper
1 tsp herbs de provance
2 Tbsp honey
½ C red wine vinegar
1/3 C extra virgin olive oil
In a large ziploc bag, place chicken, thyme, 4 garlic cloves, apple cider vinegar, canola oil, and 1 tsp of salt and pepper.  Seal the bag and massage marinade into the chicken. Place in the fridge and marinate for 1-2 hours or overnight if you plan ahead.
While that’s working mix together all of your vinaigrette ingredients, except the olive oil.  Once they are thoroughly mixed slowly stream in the olive oil while whisking continuously.  Set aside.
Place the romaine and arugula into a large dish. 
Now it’s grill time…

Place chicken onto the grill over medium heat.  Grill for 6-7 minutes and turn over. 

While it finishes cooking on the other side place the mango, orange pepper and onion slices on the grill. The idea here is to get some nice char marks but not to burn them.  The grilling brings out their natural sugars enhancing their flavor.   


When your chicken has grilled for an additional 6-7 minutes on the second side remove from the heat and allow to rest. Remove your vegetables and mango as well.  

Next carve the chicken into thin slices and place on top over the lettuce.  Slice the grilled vegetables and mango and add to the salad. Pour the vinaigrette over the top and toss well.  Serve immediately.
