Sautéed Shrimp Salad with Fresh Vegetables


Here’s another delicious and simple salad recipe that will not only satisfy your palate but will also keep you in check with whatever your weight loss goals might be. It takes about 30 minutes to make and there are really no rules. 

That’s the thing I love about salads. Yes…you can follow this recipe and you will surely enjoy, but if you have other ingredients on hand that sound good to you then take liberties and personalize to your own tastes.  
You will need…

1 ½ lbs 16-20 Ct shrimp, peeled and deveined

2 tbsp olive oil
4 cloves minced garlic
½ tsp salt
¼ tsp red pepper flakes
1/3 C dry white wine
¼ C finely chopped red onion
½ yellow pepper diced into half inch pieces
½ cucumber diced into half inch pieces
1 avocado diced into half inch pieces
1 Roma Tomato diced into half inch pieces
2 Tbsp minced jalapeno (optional)
The juice of half of a large orange
3 Tbsp white balsamic vinegar
3 Tbsp grape seed oil
Directions:
The first step is sautéing the shrimp. You’ll need a large sauté pan to which you’ll add the olive oil and garlic and cook for 1-2 minutes over medium-high heat. Add your shrimp and sauté for 2-3 minutes per side and then pour in your wine, salt and red pepper flakes. Cook till wine is reduced by half. Transfer the shrimp with all the liquid to a bowl and refrigerate for 30 minutes.
While your shrimp is chilling, mix together the onion, cucumber, yellow pepper, avocado, tomato and jalapeno (for those of you who like the heat). Next remove the shrimp from the fridge, cut in half, and add to the salad along with their wine sauce. Lastly squeeze the juice of your orange over the salad, add the vinegar and grape seed oil and toss gently. Taste for seasoning and serve immediately.  I placed this salad over top of some fresh arugula although as I was enjoying this I couldn’t help but think it would be great with some orzo pasta too!  Again the great thing about salads is that the possibilities are endless.  Enjoy!
