Lime and Garlic Chicken with Rice

Like a lot of people I find chicken to be rather bland and I’m always looking for new ways to prepare it and I love to add lots of flavor.  I had a lime that was beginning to fade and decided to pair the two up. The result was delicious and so simple to make. It has a southwest flare and is sure to please most any crowd!

  
You will need..
4 chicken thighs
2 Tbsp olive oil
¼ C all purpose flour
½ tsp salt
½ tsp pepper
1 tsp ground cumin
11/2 C Jasmine Rice
3 C chicken broth
½ red pepper diced
1 jalapeno minced
3 garlic cloves minced
½ C minced onion
½ C chopped fresh cilantro
Zest and juice of one lime
1 ¼ C shredded Queso Cheese (can substitute with extra sharp cheddar)
Directions:
Preheat oven to 375.  Place flour, salt, cumin and pepper in a medium sized bowl and dredge chicken thighs, taking care to coat on all sides and set aside.  Pour olive oil into a large cast iron skillet (or any oven safe frying pan) and bring to medium heat. Place chicken in the pan and brown 5-6 minutes on both sides.  Remove the chicken from pan and set aside.
Next add the onions and peppers (both red and hot) and sauté for 4 minutes. Add the rice, lime zest and garlic and continue to sauté for 2-3 minutes. 
Pour in the chicken stock and cilantro and add the chicken pieces back to the pan. Cover the pan with a tight fitting lid (foil will do if you don’t have one) and place in the oven for 25 minutes.  Remove the lid, squeeze lime juice over the chicken and sprinkle with cheese. Bake for an additional 5 minutes and then switch the oven to broil and cook until cheese is slightly browned and bubbly.

Hi Holly! How are you? Oh my! Your lime and garlic chicken with rice looks sooooo good. I can imagine it with a cold beer. You know, I think I'm hungry and I just ate a couple of hours ago at Chili's Restaraunt. Chicken enchilada soup as a matter of fact. By the way, I love cilantro and we use it in so many dishes.
