Pulled Pork with Carmelized Onions

I was having a conversation with my sister earlier this week about food – yes, I know; big surprise right? We were discussing our favorite foods and without hesitation we both said “pork”.  I’m not sure which I enjoy more about pork, its flavor, juiciness or high degree of versatility, but I’d happily enjoy it if stranded on a desert island for any amount of time.  Lately, pulled pork has been my version of choice. And here’s a great recipe that calls for Diet Pepsi…not exactly typical I know, but it really does hit the mark, by lending a subtle sweet flavor that works beautifully with the savory ingredients.  Try this simple yet delicious recipe and I’m sure you’ll agree.

Nutella Mocha Mousse

Last Sunday was all about cooking. I set aside the day and made multiple dishes. The show stopper however was this Nutella Mousse, made with hazelnuts and cream. I have to admit, I’ve never really been impressed by Nutella, but this dessert has changed my mind. This recipe is adapted from Micheal Symon’s Hazelnut Mousse on the Cooking Channel. I altered the ingredient amounts somewhat since I am trying to be waistline conscious, but fear not as this dessert packs a full-bodied mocha flavor that you simply can’t get enough of! Enjoy
