Warm Potato Salad with Fresh Herbs & Bacon

Here’s an easy, yet flavorful recipe for potato salad. It’s not your typical mayo-based deal, but I can’t exactly say it saves on calories because I’ve added some smokey bacon to give it extra flavor. But the true stars of this dish are the dill and basil, giving the potatoes that yummy freshness! Aside from that, I can’t help but think of spring and mucking about in my herb garden when I eat it and I just know warmer temperatures are just around the corner.  This recipe goes great with my chicken recipe and it makes enough for 6 people.  Perfect for any picnic! Try it and enjoy!

 

You will need..

1/4 C chopped fresh basil

1/4 C chopped fresh dill

2 1/2 lbs baby white potatoes

1/2 tsp kosher salt

1/4 tsp fresh cracked pepper

1 1/2 cloves chopped garlic

1/3 C white wine vinegar

3 Tbsp honey

1/3 C+ 3 Tbsp olive oil

5 strips smokey bacon

 

Directions:

Preheat your oven to 425.  Place your potatoes on a large cookie sheet, sprinkle with salt and pepper and 3 Tbsp olive oil. Roast for 35-40 minutes or till potatoes become slightly crispy and browned. Remove from the oven and allow to cool slightly.

In your blender add the dill, basil, garlic, salt, pepper, honey and vinegar. Blend on high speed till fully mixed, then slowly stream in the olive oil.  Set aside.

Cut your bacon into lardons and cook till crispy over medium heat and drain on paper towels.

Place your potatoes in a medium- sized bowl and stir in the herb mixture.  Toss well, taste for any needed seasoning and transfer to your serving dish. Sprinkle with the bacon and serve immediately!
